Pigs Might Fly

Pigs Might Fly produces chutneys, pickles, jellies , jams, marmalades and compotes  which are handmade in the kitchen of Janice Richardsons Yorkshire Home.

Janice picks most of the produce herself foraging in the local countryside, as well as the gardens of friends and neighbours. The Variety of food growing wild never ceases to amaze her, although she admits to being very protective of her patch, especially when it comes to mushrooms. You could say she has become something of a funghi obsessive.

Janice has been foraging for as long as she can remember, starting with the rock pools on holidays in Cornwall. She was the little girl with the sunburnt shoulders and white face, head down always searching.

And So her passion began. But what to do with all the produce that is simply there for the taking? Her first step was preserving the mushrooms, frying, pickling and preseving and it seemed natural to progress from there onto making chutneys, then jellies and jams. To be honest a couple of the most popular preserves were actually mistakes for example one of her most popular products started life as a jam, only it didn't set. Turns out that chilli and red onion dressing is great with grilled fish!

being a natuarlist, she is concerned with enviromental issues, and wherever possible uses recycled jars, hench the varied shapes and sizes. Friends are constantly dropping off bags of jars and they are recieved with the same enthusiasm as a delivery from interflora !

Janice comes from a catering background and food is her passion. She is happiest in the kitchen experimenting with different flavours and so it was the perfect hobby. Take for instance the trend to have black pepper on fresh strawberries led her to produce her fine strawberry jam with orange and pink peppercorns, with that extra little kick at the end. or the sharp satsuma and ginger marmalade so good with smoked duck. And as for the balckcurrant vinegar with lamb...!

Soon the hobby got out of hand with a garage bursting with jars and jars of her produce. "Janice", said her once patient husband, "What are you going to do with it all". "Sell it, of course" came the reply. "And Pig's might fly" was the swift reply.

And so a business was born. And do you know what ? It's simply flying.
